I actually think the reason they hide there face is because they are uncontrollably beautiful, and Bowser wants them to let him kill Mario because if the "Shy" Guy takes off the mask Mario's eyes would melt from his gorgeousness

cold+hot7 kind of took my answer. He is shy, and isn't going to rely on one mask to hide himself. He prepared for someone trying to pull off it's mask. It's just an identical mask. Under that is another, and another, and another.......nobody has ever managed to remove them all.
