I would have to say mario kart for the same reason you brought up, it never really gets old and you can race over and over again as many times as you want and switch it up every time so that it is still fun. They are both great games in their own respect, but in the end, mario kart has the higher replay ability of the two. Good question though. I have both mario kart wii and mario kart 7 and I can play them all the time and it is still fun because you can change the character, kart/bike and the track and there are a number of things you can do differently that you can't do in paper mario.

Mario Kart definitely.

Mario Kart is more well known to the world and it has more games in its series. You can play single player or play with friends in multiplayer mode to have fun while Paper Mario only has single player mode. Plus I have been playing the Mario Kart series since my childhood. Mario Kart will most likely keep its series going due to its popularity and fun through people of all ages worldwide. Paper Mario didn't really appeal to me when I played it a few years ago.

Mario Kart.
I used to have a group of friends in school, and in aftercare we all got together and played Mario Kart on our DSs. It was great. Fun times like that honestly made my childhood and its greatest memories.
That is why I choose Mario Kart. I've personally never even played Paper Mario.

I'm going against the flow and saying Paper Mario here. It was my childhood and nostalgia glasses or not, I enjoy playing the first three over and over. They just have this quirky little charm that reminds me why I fell in love with the series in the first place. The gameplay works well, the music is diverse, the bosses are a challenge, grinding isn't needed at all, Peach helps whenever she can, Bowser is more imposing, and the partners and NPCs have character.

Beastmode64 : hard choice because you play as a piece of paper in a paper world which is pretty fun with it's story. but Mario Kart is an awesome racing/action game which is hard to not love to play. so i'd go with Kart.

I prefer the Paper Mario games for their story, but ultimately, the Mario Kart games have the most replay value, making them more bang for your buck, and I beat games fast, so I like to have a game that has a lot of unlockables.

I'm not really sure. Mario Kart is just a common racing game. I haven't played 7 or 8, but Paper Mario is great even if it's said Sticker Star isn't. I haven't played Sticker star yet.
