I thought of this: Have players grab as many coins as possible within a time limit, or maybe power stars.
Mario 64 has a LOT of potential for competitions. 

Another game would be ice climbers.
Or maybe a different Mario game (Super Mario bros 3?)

Sonic genesis titles, or maybe even Galaga?
